How this bowl is built
- DASHI
- Kombu and dried shiitake. In this bowl, the dashi stands in front.
- TARE
- A salt tare, kept light enough not to cover the dashi.
- AROMA OIL
- Something light — citrus or pepper, most likely.
PACKAGING — DRAFT
A draft on paper. Shape and colour will both be re-decided once the flavour is settled.
